Hmmm...I think you used some Japanese sweet potatoes that were purple in color, right?:) Last time Mummy did that and our sweet potato dessert came out the same color...I've posted in my blog a long long time ago...gotta backtrack through my old posts:p
This light purple colour is great and tempting.. And, i like the size of the potatoes you cut...
You did not boil it too long, do you? As what I knew, boiling too long will easily disintergrate this type of Jap Sweet Potato... Anyway, your bowl looks successful!

Sweet potatoes are such a perfect, nutritious food! They certainly look colorful in your soup TFS!
Now that's an idea to get my daughter to eat more vegetables... try purple sweet potatoes!
